Rockin’ Starbucks Style Ginger Molasses Cookies

Living in a house without air conditioning means that baking is strictly out in the summer and as a result, after Christmas seem to be when I test all the recipes I’ve been stashing away. These Ginger Molasses Cookies are just so decadent that I would feel guilty not posting them. At the same time, they’re so rich and amazing I would never make them regularly, so Pre-Valentines day seems to be the perfect time to share.

Be warned: these are definitely a bake and immediately take into work (so you don’t get carried away and eat them all) kind of affair.

Cautions aside, this recipe care of Fab Brunette completely lived up to my expectations. The cookies taste identical to the ones they sell in Starbucks- definitely worth an attempt! They’re moist, chewy, and the size of your head. You’ll fall in love- so don’t say I didn’t warn you if you don’t want to head out on Valentine’s Day because you have found total spiritual and romantic fulfilment in a baked good.

Have fun! And then please write me a 1200 word e-mail describing how they taste because I’m not cut out to be vegan. Just kidding, vegan baking is easy, but come on. Cookies without butter? I’m not so far gone. Yet.

Ginger Molasses Cookies

Ingredients
2 1/4 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
3/4 cup (1 1/2 sticks) unsalted butter, softened
1 cup dark brown sugar
1 extra-large egg
1/4 cup regular unsulphured molasses
Granulated sugar (for coating cookie dough before baking)
Method
1 Preheat oven to 375 degrees with rack in center. Line 2 baking sheets with parchment paper, set aside.
2 Sift flour, baking soda, salt, cinnamon and ginger into a medium bowl. Set aside.
3 Cream the butter and brown sugar in a large mixing bowl with mixer on high speed until light and fluffy, about 1 minute. Lower to medium speed, beat in the egg and molasses, the increase speed to high and beat about 1 minute longer, until mixture no longer looks curdled.
4 Mix in the flour mixture on low speed. The batter will be rather stiff. Place some granulated sugar on a plate, and using an ice cream scoop or measuring cup form 1/4-cup portions of dough. Transfer dough to your hands and roll each portion into a rough ball, then roll each ball into the sugar. Place six sugared balls on each baking sheet, spacing them evenly, because they will spread during baking.
5 Dampen your fingers with water and press down lightly on each cookie to flatten it a little and dampen the top. Refrigerate one filled baking sheet while the other bakes.
6 Bake for 12 minutes, or until the cookies have spread and are firm to the touch. Allow to cool and then eat.

Ahh! I’ve made these cookies and they are incredibly delicious. You have an amazing will power to not taste test one of these. Do you love your kitchenaid as much as I love mine?

Until this Christmas I’ve been using a hand mixer from my grandma’s basement, that was from the early 1990s. I could KISS my mixer. Such an improvement!!

They look DELICIOUS, and those are my favourite Starbucks cookies. I’m finding with some of the new recipes I’m trying too that they’re incredibly wonderful but way too decadent to make on a regular basis :)

I definitely have to try these. I made cookies with molasses the other day but didn’t like them at all. These look and sound a lot better – just by reading the ingredients alone.

You make baking look like so much fun! Whenever I’m in the kitchen it is a mad dash from oven, to countertop, to fridge, and there’s always a “Shit, I forgot the _____!”

My friend, a hardcore vegan, made a vegan “Eggnog Cheesecake” for my birthday. It was beyond delicious. And she has an entire cookbook that is devoted to all sorts of vegan cupcakes, which again, are so, so good. Enjoy the rest of the month!

I leave the vegan baking to Spiral Diner, our amazing local vegan diner and bakery. (If you ever make it to Dallas, God help you, you’ve got to check it out. You’d love it!) But these look amazing. Oooh! These remind me of my mom’s “short-stack cookies”- they’re some of my favorites! She gets a lot of her best recipes from food murder mystery novels (yes, that is an actual genre) and that’s where this one came from. I hope yours are just as delicious!

Oh! I want to try to find a gluten-free variation of this too! I used to make these when I was a kid, but we called them friendship cookies. You can play around with the warming spices you add – nutmeg, cloves, cardamom, etc. So good!

That mixer is a delightful addition to the family – I just adore it.

I must admit, however – I’m not the best of bakers. In fact, cupcakes that don’t quite rise and are shoddily iced are about as good as it gets. I’m sure my boyfriend secretly resents my lack of prowess in the kitchen.

However! I simply cannot give up the opportunity to eat a cookie the size of my head, so will give these a go and let you know if I burn the house down/have a nervous breakdown/give up and eat the raw dough. :)

My Kitchen Aid mixer looks like a match to yours; it is, by far, THE BEST addition to my kitchen. It was a hand-me-down from my mom, who bought it in 1990, and it still works like brand new!

These cookies look SO incredible. I have a soft spot for soft, ginger cookies. My mom made some for me & Jonathan for Christmas this past year, & I was pretty much in heaven. There is nothing like being reminded of how wonderful the world can be when you eat a warm, soft, melt-in-your-mouth ginger cookie.

& I’m with you. I’m always tempted to try the vegan baking thing, but the thought of not using butter makes me feel sad for some reason.

I have a question, though… Do you know of a good egg substitute for this recipe? We don’t eat eggs, & here in LA, we can’t just buy ONE for a recipe; we actually have to buy a whole carton of eggs. I don’t want them to go to waste, but damn… I WANT THESE COOKIES.

I’ll do what I can! There are a number of awesome egg substitutes here that are extremely easy and tasty- I actually just bought ground flax seed to try this fix out, but I’ve used tofu and applesauce in muffins (if you use vegetable oil instead of butter, most things are insta-vegan!) and have had great results. This dough is incredibly stiff, so even with those mushy and non-binding replacements it could still hold up… I might have to try these after all… =)
